Fish workshop 8th November 2011 at 11.30 to 1.30pm
As many people have said they are not always sure of how to cook
fish and would I do a workshop on fish, I thought the dishes below
would be a good starting point. All the fish can be purchased in local
supermarkets.
Baked fish in sea salt –(Dorada) this makes a beautiful
succulent dish
Smoking fish (Trout) using the tea, sugar and rice method –
very quick and easy to do and makes delicious delicate smoked fish
Spicy Mackeral a different way to use mackerel fillets and no
smell!!
Fish in Papillote – (Lubina) baked in parchment paper
Succulent steamed Salmon- steaming salmon seems to retain
the rich oils and the fish stays moist. I find this a better way for
cooking the salmon than either micro/wave or oven baked if not
using a recipe that dictates either of these methods.
